Shortbread Cookie Recipe for Your Keto Diet

 

Keto Shortbread Cookie Ingredients

  • 1 cup almond flour
  • 3 tbsp soft butter, cut into small bits
  • 3 ½  tbsp confectioner- sugar substitute (coffee grinder to powder.)
  • 1/8 tsp salt
  • ½ tsp vanilla
 

Directions for Baking Shortbread Cookies

1. Preheat the oven to 350 degrees F before you begin. 

2. In a medium bowl, put almond flour (instead of all-purpose flour), salt, powdered sweetener substitute, and mix.

3. Add chunks of butter and mix well. You can use a stand mixer, but your hands will do, to mix and pinch in the butter until well-blended. 

4. Next, add vanilla. 

5. Then, knead the dough into one big ball. 

6. Pinch off chunks and roll into balls, about 1 inch in diameter, and place on a parchment or silicone matt lined pan. Press the balls slightly with the palm of your hand so they would be ½ - ¼ inch thick. 

7. Bake at 350 degrees F for 8-10 minutes. Be sure to pull them out before they turn brown. 

This recipe does not make a lot of cookies, so you may want to double or triple it. Enjoy!

What are erythritol and xylitol? Erythritol is a sugar alcohol that can be found naturally in certain fruits which do not spike blood sugar or Fat Storing Hormone levels. Meanwhile, xylitol is also sugar alcohol with supposed benefits to dental health.

  • Low-carb chocolate mousse - This dessert uses unsweetened cocoa powder, gelatin, and keto-friendly whipped cream. It’s still as chocolatey as ever, less the saturated sugar.
  • Chocolate chia pudding - Not only does this use unsweetened cocoa, this dessert also contains chia seeds, which contains Omega-3 fatty acids! Try the vanilla version, too.
  • Sugar-free raspberry jam - Make pies with deliciously sweet raspberry jam but still stay within the boundaries of your keto diet.
